Ingredients:

  • 3 to 4 lamb shanks (approximately 1284g)
  • 2 tablespoons (30ml) olive oil
  • 8 garlic cloves (about 34g), sliced
  • 2 tomatoes (approximately 311g), quartered
  • 1 large onion (about 281g), sliced
  • 1 cup (250ml) unsalted chicken stock
  • 2 teaspoons (5g) ground cumin
  • ½ teaspoon (1.5g) cinnamon powder
  • ½ teaspoon (1.5g) turmeric
  • ½ teaspoon (1g) ground coriander seed
  • Salt and black pepper to taste
  • Garnish with Fresh coriander

Instructions :

Step 1: Preparing and Browning Lamb Shanks

  • Heat the Instant Pot using the Sauté More function. Wait until it indicates HOT (~8 mins) to ensure it reaches the optimal temperature for the Maillard reaction.
  • Pat dry the lamb shanks and season one side with salt and black pepper. Drizzle 2 tbsp (30ml) of olive oil into the inner pot. Place the seasoned side of the lamb shanks in the Instant Pot, and season the other side with more salt and black pepper. Brown each side for 5 minutes to develop rich flavors. Note: If you prefer a simpler method, you can skip the browning and sauté steps.

Step 2: Sautéing Onions and Adding Spices

  • Set the browned lamb shanks aside. Add sliced onions to the Instant Pot and sauté until softened (approximately 2-3 minutes). Add sliced garlic, 2 tsp (5g) ground cumin, ½ tsp (1.5g) cinnamon powder, ½ tsp (1.5g) turmeric, and ½ tsp (1g) ground coriander seed. Sauté for an additional minute.

Step 3: Deglazing and Preparing for Pressure Cooking

  • Pour 1 cup of unsalted chicken stock into the Instant Pot and deglaze by scraping the flavorful brown bits off the bottom of the pot with a wooden spoon.
  • Place the browned lamb shanks back in the Instant Pot, partially submerging them into the liquid. Layer the quartered tomatoes on top.
